A Cuban Recipe For You

I love passing these delicious Cuban Recipes to you.

CAMARONES ENCHILADOS  for 6 (You can substitute Shrimp with Lobster or any Seafood)

2 lbs.  Large Shrimp

1/2 Cup Olive Oil

1 Large Onion

3 Cloves Garlic

1 Large Green Pepper

6 oz Red Pimiento in Water

1/2 Cup Parsley

1/2 Cup Ketchup

1/2 White Wine

Small Can Tomato Sauce

1 T Vinegar

1 T Salt

2 Bay Leaves

1 T Black Pepper

Hot Sauce (to your liking)

1 T Capers

1/4 Cup Green Olives Stuffed with Pimientos

Blend together the following ingredients:  Onion, Green Pepper, Pimientos, Tomato Sauce, Ketchup, White Wine, Salt, Pepper, Hot Sauce, Vinegar.

Saute “Sofrito” in Olive Oil – Use a large saucepan

Add Shrimp

Finish by adding:  Capers, Parsley, Bay Leaves.

Simmer for 15 minutes.
